Candies Bala Cranberries

Ingredients

  • 2 cups sugar

  • 3/4 cup water

  • 1/2 cup light corn syrup

  • Approx 1/2 tsp red food colouring 

  • Frozen or fresh cranberries 

  • Toothpicks/short skewers 

Directions 

  1. Prepare a plate or tray with parchment paper and set aside. 

  2. Combine the sugar, corn syrup and water in a heavy-bottomed saucepan over medium heat. Bring it to a boil and cook the mixture until a candy thermometer reaches 300°F (the hard crack stage). This seems slow up until 230°F and then gets to 300°F quickly. (Should take about 20 minutes in total.) It will turn amber in colour. Note: make sure the thermometer isn’t touching the bottom of the pan 

  3. Remove the candy mixture from the heat and carefully stir in the red food coloring. (Be careful it doesn’t splash.)

  4. Skewer the cranberries in 3s in a wooden skewer or single on a toothpick 

  5. Carefully dip the cranberries into the candy mixture, swirling to coat them and allowing any excess to drip back into the pan. Transfer the coated cranberries to the prepared tray from step 1 and allow them to cool until the candy has fully hardened.

  6. They’ll be hard and ready to eat within 10 minutes!
